Should a beginner try to catch tuna?

i'm going on vacation in florida keys week, , hear fishing pretty popular down there. think may fun take day , go fishing, "blackfin tuna" hear tastes good. however, more or less beginner, idea?another thing- eat fish, can process regular kitchen knives? or ahead of myself here? advice? thanks.
